Tex-Mex Empanada Nachos

This cheesy, protein-packed recipe is guaranteed to be a hit with tasty Chicken & Cheese Empanadas, cheddar cheese, refried beans, and jalapeños.

Ingredients

  • 1 bag of Chicken & Cheese Empanadas (these will be your base)
  • 12oz of shredded Longhorn Cheddar. Cheese (or any brand if Longhorn not available)
  • 1 can of refried beans
  • 1 can (about 20) pickled jalapeños
  • One tomato diced (optional)
  • Guac & Salsa for serving

    Bake or Air Fry Empanadas according to the package

    Let cool for 10 minutes

  3. 3

    Arrange baked Empanadas close together on a sheet with parchment paper

  4. 4

    Use a spatula to spread refried beans on top of each Empanada

  5. 5

    Sprinkle cheddar cheese on top of empanadas and refried beans

  6. 6

    Place one pickled jalapeño on each Empanada (or more depending on your spice preference)

    Bake at 375 degrees for an additional 5-7 minutes or until melty and warm. *Optional put under broiler, low, for 3-5 minutes for a crispier top layer.

    Sprinkle diced tomatoes

    Serve guac and salsa on the side for dipping and enjoy!
