Roasted Tomato Soup and Cheddar & Parmesan Cheese Bread


Ingredients
- 1 Bag Brazi Bites Cheddar & Parmesan Cheese Bread
- 9 Tomatoes
- 1 Head of Garlic
- 1 Onion
- 2 Tbsp Olive oil
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- 1.5 C Bone broth
- Β½ C cottage cheese

Preheat oven to 400 degrees Fahrenheit.

Cut Roma tomatoes in half lengthwise, peel onion and cut into chunks.

Cut the top off the bulb of garlic.

Line a baking sheet with parchment paper and add tomatoes, onion, and garlic.

Drizzle with olive oil and spices, toss well to coat.

Arrange tomatoes cut side down and place the garlic cut side down as well.

Roast for 45 minutes.

After 30 minutes, spread Brazi Bites on another lined baking sheet.

Bake Brazi Bites for 20 minutes.

Transfer roasted tomatoes and onion to a blender. Squeeze out garlic, add broth and cottage cheese.

Blend the mixture until smooth.

Pour the soup into bowls, optionally add more parmesan cheese and serve with Cheddar and Parmesan Cheese Bread. Enjoy while hot!
