Gluten-Free Ham and Cheese Puffs
 
   
    Ingredients
- 2 Bags of Cheddar & Parmesan Cheese Bread(thawed)
- ½ C chopped cooked ham
- 1 C fresh spinach, roughly chopped
- 1 tbsp butter
- ½ C shredded cheddar cheese (additional for garnish, optional)
- ½ C shredded mozzarella cheese
- 1 tbsp dijon mustard (optional)
- 1 egg, beaten
- Pinch of dried thyme or italian seasoning
- Salt and black pepper to taste
- Cooking spray
- 
    1Preheat the oven to 40O°F. Line a baking sheet with parchment paper and lightly coat with cooking spray. 
- 
    2In a large skillet, melt butter over medium heat. 
- 
    3Add the chopped spinach to the pan and cook until wilted, about 1-2 minutes. Add chopped ham and cook for 2-3 minutes, or until slightly browned. 
- 
    4Now, directly in the pan with the cooked ham and spinach, add the cheddar cheese, mozzarella cheese, thyme (or Italian seasoning), Dijon mustard (if using), and a pinch of black pepper. 
- 
    5Carefully roll out Brazi Bites, creating a small square of cheese bread. 
- 
    6Place a spoonful of the ham, spinach, and cheese mixture in the center of each Brazi Bite square. 
- 
    7Brush the tops of the folded Brazi Bites with the beaten egg. 
- 
    8Arrange the filled Brazi Bites on the prepared baking sheet, leaving some space between them for puffing. 
- 
    9Sprinkle with additional shredded cheese for extra melty goodness. 
- 
    10Bake for 10-12 minutes, or until golden brown and puffed. 
- 
    11Let cool slightly before serving.
