Brazi Bites Spinach Artichoke Dip

Preheat the oven to 375°F (190°C). Grease a mini muffin tin with cooking spray.
Prepare the zucchini: Using a sharp knife or mandolin on the thinnest setting, create long, even strips of zucchini. Aim for roughly 1/8 inch thickness. Gently roll each strip from the wider end toward the thinner end, forming a tight spiral. Repeat with remaining strips. Set aside. Cut up onion, dice finely.
Assemble the crust: Combine two thawed Brazi Bites in a separate bowl and mash them with a fork until flattened. Press each flattened Brazi Bite into the bottom of a mini muffin cup, forming a small cup shape.
Make the filling: In a medium bowl, whisk together the eggs, milk, salt, pepper and fresh thyme. Stir in the zucchini and onion mixture and then the shredded cheese.
Fill and bake: Divide the egg mixture evenly among the Brazi Bite crusts and add in zucchini. Bake for 15-20 minutes, or until the egg is set and the crust is golden brown.
Cool and garnish: Let the quiches cool for a few minutes before carefully removing them from the muffin tin. Garnish with chopped fresh parsley, if desired, and serve warm.
