Brazi Bites Blueberry Waffle Casserole

Line an 8x8 inch baking dish with parchment paper. Leave some overhang on the sides for easy removal later.
Arrange waffles in a single layer on the bottom of the prepared baking dish. You may need to cut some waffles in half to fit them snugly and cover the entire base.
Spread a layer of peanut butter over the top of the waffles.
In a large bowl, combine the rolled oats and shredded coconut.
In a separate saucepan, heat the honey and coconut oil and salt over low heat. Stir constantly until melted and well combined.
Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.
Add granola mixture on top of peanut butter layer.
Refrigerate for at least 2 hours, or until the bars are firm.
Once chilled, use the parchment paper overhang to carefully lift the bars out of the pan and onto a cutting board.
Use a sharp knife to cut the bars into desired sizes (squares, rectangles, etc.).
In a microwave-safe bowl, combine the chopped chocolate and coconut oil. Heat in short bursts, stirring in between, until the chocolate is melted and smooth.
Drizzle the melted chocolate over the top of the cut bars. You can use a spoon or a piping bag for a more controlled drizzle.
Place the bars back in the refrigerator for at least 30 minutes to allow the chocolate to set completely.
