Brazi Bites Blueberry Waffle Casserole

This fun and easy casserole is simple to make using Brazi Bites Blueberry Waffles as a base and adding a few other delicious ingredients. It comes together quickly and is baked in less than a hour, so it’s perfect for breakfast, brunch, or spring parties.

Ingredients

  • Casserole:
  • 2 boxes Brazi Bites Blueberry Waffles
  • 7 eggs
  • 1 3/4 C oat milk
  • 1/2 C maple syrup
  • 1 tbsp vanilla
  • 1 tsp cinnamon
  • Crump topping:
  • 1/4 C of melted butter
  • 2 tbsp of granulated sugar
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1/2 C gluten-free flour
  • 1 C blueberries

    Let 2 boxes of waffles defrost to room temperature.

    Slice waffles into cubes.

    Beat together eggs, oat milk, maple syrup, vanilla, and cinnamon.

    Put cubed waffles in an 8x8 dish and pour over casserole mixture.

    Refrigerate for a minimum of 3 hours or overnight.

    Prepare the crumb topping by mixing melted butter, granulated sugar, brown sugar, cinnamon, and gluten-free flour.

    Remove casserole from refrigerator and add blueberries and sprinkle on crumb topping.

    Bake at 350F for 45-50 minutes.

    Let cool before slicing and enjoy!
