SOUTHWEST AVOCADO TOAST

Cheese bread topped with zesty southwest-inspired ingredients… this isn’t your average avocado toast, people!
• 10 Garlic Asiago pieces
• 1 avocado
• 2 eggs
• knob of butter
• 1/2 lime
• 1/4 red onion
• 1 tomato
• 1 jalapeño
• cilantro for garnish
• salt and pepper to taste
PREHEAT OVEN TO 400°
Make Brazi Bites based on package instructions.
Flatten Brazi Bites.
Beat eggs with salt and pepper in a bowl. Melt butter in a small pan until frothy, add eggs. Pour in eggs and slowly bring in edges to scramble as the eggs cook through.
Make the pico de gallo. Dice and combine tomatoes, onions, and jalapeños. Squeeze 1/4 of the lime and mix.
Mash and combine avocado, lime, and salt and pepper with a fork in a bowl.
Assemble the avocado toasts. Start by spreading the avocado mash onto the Brazi Bites. Then top with scrambled eggs, pico de gallo, and garnish with cilantro.
