Brazi Bites Waffles Eggs Benedict
Ingredients
- 2 Brazi Bites Waffles, frozen
- 2-4 Eggs (your choice)
- 3 slices Deli Ham (3 slices each)
- ¼ C Hollandaise Sauce (homemade or store-bought)
- Fresh Chives, chopped (for garnish)
- Salt and freshly ground Black Pepper

Using a toaster, toast the frozen Brazi Bites waffles according to your desired level of crispness. They should be golden brown and slightly firm when toasted.

Bring a pot of water to a simmer. Crack each egg into a small separate bowl. Once the water is simmering, gently add a splash of vinegar (optional, helps the whites hold their shape). Swirl the water with a spoon to create a vortex, then carefully slip each egg into the center. Cook for 3-4 minutes, or until the whites are set and yolks are cooked to your desired doneness (runny, medium, or well-done). Remove with a slotted spoon and drain on paper towels.

Heat a skillet over medium heat with a drizzle of olive oil. Add the ham slices and cook for 1-2 minutes per side, or until warmed through and slightly crisp around the edges.

Place a toasted Brazi Bites waffle on each plate. Top each waffle with the ham. Gently place a poached egg on top of the ham.

Drizzle a generous amount of hollandaise sauce over each poached egg.
