This Waffles Eggs Benedict recipe combines delicious hollandaise sauce drizzled over perfectly poached eggs and smoky ham, all resting atop a golden, crispy Homestyle Waffle.

  • 2 Brazi Bites Waffles, frozen
  • 2-4 Eggs (your choice)
  • 3 slices Deli Ham (3 slices each)
  • ¼ C Hollandaise Sauce (homemade or store-bought)
  • Fresh Chives, chopped (for garnish)
  • Salt and freshly ground Black Pepper

    Using a toaster, toast the frozen Brazi Bites waffles according to your desired level of crispness. They should be golden brown and slightly firm when toasted.

    Bring a pot of water to a simmer. Crack each egg into a small separate bowl. Once the water is simmering, gently add a splash of vinegar (optional, helps the whites hold their shape). Swirl the water with a spoon to create a vortex, then carefully slip each egg into the center. Cook for 3-4 minutes, or until the whites are set and yolks are cooked to your desired doneness (runny, medium, or well-done). Remove with a slotted spoon and drain on paper towels.
