What is Brazilian Cheese Bread?
Pão de queijo, or “cheese bread” in Portuguese, is a staple in Brazil and throughout South America. It’s a delightful snack made with tapioca flour, which makes it naturally gluten-free. In Brazil, it is enjoyed all hours of the day, particularly during breakfast and family gatherings. Brazi Bites Brazilian Cheese Bread is based on our family’s recipe from Brazil and uses the perfect blend of only the finest hand-picked ingredients – like fresh cheese, eggs and milk – with absolutely nothing artificial. How do you pronounce "pão de queijo?"
“Pão de Queijo” means cheese bread in Portuguese and it is pronounced “pown-deh-kay-zho”.

All of our products are sold frozen and ready-to-bake. No prep or mixing required. They go straight from the freezer to the oven and are ready to enjoy in minutes.

Is it okay to eat your products cold?
Yes, you can absolutely enjoy all of our products cold. Since they will be freshly baked and contain no preservatives, they will be extra delicious enjoyed warm and within a few hours after baking.

Are your products nut free?
Yes, all Brazi Bites products are nut-free. However, Brazi Bites are made in facilities that process nuts and tree nuts.

What kind of enzymes do you use in your cheese?
All of our cheeses use vegetable rennet.

What is tapioca flour?

Why are you not using traditional Minas cheese for your Brazilian Cheese Bread?
Minas cheese is very difficult to source in the United States. When our recipe was developed, our founders experimented with different combinations of cheeses to capture the authentic flavor and texture of pão de queijo. Our Cheddar & Parmesan is the result of this experimentation and the most traditional flavor in our Brazilian cheese bread line. You can read more about our story here: Our Story

We try to support as many organizations as possible that want to share our products with their community. Since our products are frozen, donating actual product can be tricky. Instead, we generally opt to donate product coupons. How do I cook Brazi Bites Waffles?
Brazi Bites waffles can be quickly heated in the toaster or oven. Toaster instructions: heat frozen waffles in lowest heat setting and repeat as needed to heat completely. Oven instructions: preheat oven to 400°F. Please frozen waffles on baking sheet and heat for 6-8 minutes or until hot.

Why didn't my Cheese Bread bake up as large as they look on the photos?
Our bread uses only natural ingredients with no preservatives or artificial additives. Because of this, some slight variations in size are expected. Some are fluffier than others because of the natural moisture content in the tapioca flour. But no matter the size, they should all be cheesy and delicious!

What should I do if my bites are stuck together?
Let the bites thaw for 5-10 minutes or until they are soft enough to easily split apart.

My Brazilian Cheese Bread was gooey in the middle — is that normal or did I bake them wrong?
Our Brazilian Cheese Bread is made with tapioca flour, which gives the dough a natural gooey quality even when cooked. This crispy, golden brown crust and soft inside is what has made Brazilian Cheese Bread (pão de queijo) beloved around the world, but we know the distinct texture is not for everyone. To achieve a firmer bread, you could try reducing the baking temperature by 25-50 degrees and extending the bake time by 5-10 minutes. You may also find the texture more to your liking once the product has had a chance to cool down.

I want to bring your Brazilian Cheese Bread to a party! Is it okay to reheat them?
We recommend partially baking the Brazilian Cheese Bread at home (approximately 75%), letting the dough cool, then finishing up (25%) at your destination. If that’s not an option, you could fully bake your cheese bread at home then gently warm them upon arrival. If heating at your destination simply isn’t an option, that’s OK! Wrap the baked bites in linens to trap the moisture and store in a thermal bag if available.

Can I cook Brazi Bites products in the microwave?
We do not recommend cooking our products in a microwave. The dough will not rise properly, and you’ll likely be disappointed in the end result!

Can I cook Brazi Bites in an air fryer?
Yes! You can use an air fryer to cook delicious Brazi Bites Cheese Bread and Empanadas in 15 minutes or under. We suggest cooking them at 340 degrees for 15 min for the ideal crust. How long does it take to bake Brazi Bites?
Our products go straight from the freezer to the oven and take about 20 minutes to bake in a convectional oven and 15 minutes in the air fryer. Our Waffles take about 1-2 minutes in the toaster depending on your toasting preference.
